“HALVA” BARS WITH SORGHUM

One of the best Paleo-style ancient—or heritage—grains is sorghum, which was discovered 8,000 years ago growing in southern Egypt. Unlike genetically modified wheat, sorghum has remained pretty much the same today as it was back then. And that means it’s tolerable for all of us: it’s gluten-free and nutritious too, because it’s high in iron and fiber.

These bars use sorghum in an unusual way: we pop the grains. It makes them airy and delicious. Think of this as our healthier version of halva—a traditional Middle Eastern confection—made with slightly sweet sorghum, popped like popcorn. (This technique works with millet and amaranth, too.)
